This cocktail represents the Crown of Castile’s gateway to the world afforded by the conquest of the Canary Islands. New trade routes brought new commodities unknown until that moment in the islands, such as the Asian root, ginger, used to make this cocktail.
Crush strips of ginger and slices of lime in syrup of ginger. Add honey rum and crushed ice, top with ginger beer.
